As the Moon, Earth and Sun dance their orbits, the part of the Moon that is illuminated by sunlight moves in and out of our field of vision, creating a predictable series of lunar phases.
In any given month, we see eight different moon phases based on how much of the lunar disk is illuminated from our perspective and whether the moon is approaching or receding from the full moon phase.
